MARINATED SARDINES

Ingredients

  • 500 g sardines
  • salt
  • 50 dag olive oil
  • 20 dag onions
  • fish or vegetable stock
  • mild white wine (to taste)
  • laurel leaf, rosemary, whole pepper
  • capers
  • chopped parsley
  • lemon

Remove the head and offal from the sardines. Spinal bone can also be removed.

Roll in flour and fry in olive oil. Lightly salt the fried fish and load into the pan.

Fry the sliced onions in the leftover oil, just enough to brown. Then pour a little stock and wine. Add all spices, chopped parsley and lemon slices. Boil well and pour on fish. When cool, set in the refrigerator and serve in a few hours.
