Ingredients for flying mush thighs and wings

  • 400 g boneless chicken thighs
  • 4 chicken wings
  • salt, pepper, garlic powder
  • fresh thyme, parsley
  • burger gel for binding (can be replaced with half egg)
  • 3 eggs
  • flour and breadcrumbs (breadcrumb coating)
  • oil for frying

Ingredients for “masovnik"

  • 1 dl sweet cream
  • 150 g sour cream
  • 30 g corn flour
  • saffron, salt, pepper
  • 1 yolk

Ingredients for caramelized apples with cranberries

  • 50 g sugar
  • 100 g apples
  • 40 g dried cranberries
  • 20 g butter
  • 0.5 dl white wine
  • 1 dl sweet cream
  • cloves, cardamom, lime juice and peel

Ingredients for sautéed peas

  • 200 g peas
  • 20 g butter
  • mint, salt, pepper

For flying mush thighs and wings remove the meat from the bone and cut it into small cubes. Cook the chicken wings in the stock, remove the meat and clean the thicker bone. Season the sliced meat with salt, pepper, garlic, fresh thyme, mix with burger gel and mix all together well. Form into balls.

Pan in flour, parsley with egg and bread crumbs.

Stick a bone in each of the balls. Wrap aluminium foil around the bone. Fry in hot oil. Remove the foil.

For “masovnik” in a small pot mix the sweet and sour cream, flour and season the mixture. Cook slowly to thicken. At the end add the yolk. Pour the cream into siphon add two bombs for siphon and leave in a warm place

To prepare caramelized apples with cranberries slowly heat the sugar and caramelize in a pot, until slightly brown. Add the butter, diced apples and cranberries, mix all together well. Add cloves, cardamom and wine and simmer, at the end enrich with sweet cream, add lime juice and peel and boil.

Blanch and peel the peas. Sautéed on butter together with sliced mint leaves. Season the mixture.

Serving

with a spoon place a »masovnik« on a plate, next to it place a flying mush thighs and wings, add sautéed peas and top with caramelized apples with cranberries.
